Do you ever find a recipe that makes "3 dozen" cookies, but when you make it, it's more like "2 dozen, plus a lot of raw dough in my stomach? Or "2 dozen really big cookies"? I am guilty of this always.
Today, however, I was thisclose to making the actual "5 dozen" that the recipe called for and they didn't smoosh together on the cookie sheet! Instead, they came out cute and golden brown and delicious.
Not to mention, this is a great recipe to send the summer off (or if you're me, shove it out the door because it has overstayed it's welcome). Lemony, sugary goodness to make up a light cookie that's perfect for munching in the middle of the (very hot) day.
Lemon Sugar Cookies - makes "5 dozen" ;)

Ingredients:
1 cup butter, softened
1&3/4 cup sugar
1 egg
1 tsp vanilla
the juice of 1 lemon (about 3-4 tbsp)
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
3 cups flour
1) Mix butter and sugar until creamy. Add in egg and vanilla and mix well.
2) Add lemon juice, baking soda, baking powder, and salt. Mix well.
3) Add flour and mix until just combined. Dough should be thick.
4) Heat oven to 350 and bake cookies on Silpat for 8-10 minutes. Remove and let sit on cookie sheets for an additional few minutes before moving to a wire rack to cool completely.
