em + the kitchen - pumpkin baked oatmeal.

After my granola success, I decided to try my hand at baked oatmeal.
I first had this stick-to-your-ribs breakfast food at a small cafe in Waco, where they drowned a square of the stuff in whole milk, maple syrup, and brown sugar. It was fantastic.
I first made an almond + apple version that was good, albeit dry.
When I tried the pumpkin baked oatmeal, I knew I had a winner.
It was moist and sticky and sinfully good topped with maple syrup. It sticks with you well into the late morning which is a huge deal for me being that I'M ALWAYS HUNGRY.
I never tried it this way, but I imagine a handful of pecans or a sprinkle of brown sugar would be excellent to top it off. I also tried it one morning drenched in almond milk, but it's just not necessary. It stands on it's own quite well and will be a breakfast food I make many times over.

Pumpkin Baked Oatmeal
(recipe from Budget Bytes)
serves 6

Ingredients:
1 can pureed pumpkin
1/2 cup brown sugar
2 eggs
1 tsp pumpkin pie spice
1/2 tsp salt
3/4 tsp baking powder
1/2 tsp vanilla
1+1/2 cups milk (I used almond - it's all I had on hand)
2+1/2 cups old-fashioned oats

Preheat oven to 350*. Prepare an 8x8 baking dish by coating with cooking spray.
In a large bowl, whisk together pumpkin, sugar, eggs, pumpkin spice, salt, baking powder, and vanilla. Add in milk and fully incorporate.
Finally, add oats until mixture is fully wet. (It will be very runny!)
Pour mixture into prepare dish and bake, covered with foil, for 30 minutes.
Remove foil and bake for an additional 15-20 minutes.
Serve piping hot out of the oven! Mmm.
Can be eaten cold or hot, but I reheated mine every morning because FALL, y'all.
